Strawberries are hands down my favorite fruit, and there is nothing better than buying fresh strawberries from the farm stand. They taste completely different than store bought strawberries.
So when life gives you strawberries…you make strawberry muffins.
The muffins were pretty delicious, but in the future I would add in cut up strawberry pieces to the batter instead of just placing them on top. I loosely followed a recipe that they were giving out at the farm stand, but of course I didn’t bring it home with me. I will post it when I get my hands on it because it is worth sharing.
Since I had eaten more muffin batter than could be good for human consumption, I hopped on my bike and went for a very hilly ride.
Last time I was up in the Poconos, I tried running, but it was way to hard because of all the hills. Biking up some of the hills is almost impossible and I had to get off my bike and walk up a few times.
After my bike ride, Munchkin and I went for a walk and managed to catch the sunset between the trees.
I also got him a sweet looking helmet, which he is so far less than thrilled to wear, but safety always comes first. Munchkin also got his very own lawn chair.
After we got home, I stayed up until 1AM because I had to finish the second Hunger Games book, and it was totally worth it. The second book was just as good as the first and I cannot wait to get my hands on the third to see how everything ends. I highly recommend the series.
Have a great Monday!
