Since the strawberry supply was still running high, Monday was another very strawberry day.
After my run, I came hope to enjoy a Van’s maple waffle topped with cream cheese and strawberries. We ate breakfast in the yard, so Munchkin could lounge in his new chair.

Since I was still in a baking mood, I whipped up a batch of strawberry mini cakes and oatmeal craisin cookies.
That evening, we went to visit Tommy’s goddaughter, Arianna. She is almost seven months old and super cute. Munchkin had a great time playing with her.
I woke up on Tuesday still in the mood for some kind of baking. I saw this recipe on the Food Network a few months ago and I knew it was the day to finally try it out.
French Toast Waffles
Ingredients
- Cooking spray
- 1 cup fat-free milk
- 1 tablespoon sugar
- 1 tablespoon butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 8 slices whole wheat bread
Preparation
- Coat waffle iron with cooking spray, and preheat.
- Combine all ingredients other than bread, stirring well with a whisk. Dip bread in mixture to coat.
- Cook 3 to 5 minutes or until done; repeat the procedure with the remaining bread.
They were really good, but next time I think I will try to use a thicker cut bread to make them a little fluffier.
After breakfast we headed off to Long Island. First we went to Roosevelt Field mall to look for work boots for Tommy, who starts on July 5. Unfortunately, we couldn’t find the boots he needed in his size. After our boot search, we headed over to Long Beach to get lunch/dinner at Swingbelly’s BBQ.
I started off my meal with a Shock Top. I never had Shock Top before and I really liked it. It tastes a lot like my fav, Blue Moon.
I had the cheesesteak sandwich, which was really good, but the sandwich I had last time I was there, was better.
Swingbelly’s is the kind of place you go to, to eat your only meal of the day because the portions are so big. This time we sat inside because it was looking like it might rain and I got to play some word games on the Playmaker. I don’t want to brag or anything, but I kinda got the high score.
When we got home, we put together a bike that I randomly received when purchasing Alex’s nursery furniture. And by we, I mean that Tommy put everything together while I stood around and looked pretty.
We also hooked up Munchkin’s bike seat and took it for its inaugural ride.
