Oatmeal Flax Chip Cookies and Cheap Books

After an intense heat wave, even rainy, otherwise unwelcome weather, is exactly what you need.

It rained for most of the day yesterday and me and Munchkin napped away the afternoon, without a care in the world.  I woke up in the early afternoon and the first thing that came to mind on a cool, dreary afternoon was cookies.  Since oatmeal craisin cookies are a big hit around these parts, I decided to try oatmeal cookies with a twist.  I followed a recipe I found here, but swapped out to include the ingredients I had on hand.


Oatmeal Flax Chip Cookies

  • 3/4 cup flour
  • 1/4 cup ground flaxseed
  • 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1/8 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 ounces butter, softened
  • 2 tablespoons olive oil
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups bittersweet chocolate chips
  • 1/2 cup walnuts
Preheat oven to 350 degrees. Mix together flour, flax, oats, baking soda, cinnamon and salt.
With an electric mixer, beat together butter, oil and sugar for one minute, until the mixture is smooth. Add the egg and vanilla; scrape down sides, and continue to blend until incorporated. Add flour mixture a little at a time until incorporated. Stir in chocolate chips and walnuts.
Spray cookie sheets with cooking spray and mound rounded tablespoonfuls of batter on each sheet. Bake for 10 minutes, swapping sheets half way through, until golden. Let cool slightly and slide cookies onto a cooling rack. Makes about 24 cookies.
When I finished making the batter, I thought to myself that either these cookies are going to be amazing or they’re going to be inedible because it looked a little strange.  They are definitely amazing, we couldn’t get enough of them.
While I was baking, Munchkin went out to help his grandpa clean out the garage.  When I looked out this is what I found. 
Who doesn’t like swimming in their clothes in the rain? 
Like every good adult, we enjoyed our dessert before we went out for dinner.  Every time I eat sweets before dinner, it makes me think of the movie Remember Me.  If you haven’t seen it, I don’t know what you’re waiting for!
Dinner was, as usual when we eat out, sushi.  It’s just one of those things we cannot get enough of. 
After dinner, we headed over to Borders to check out if we could get some good deals on books since Borders is closing its doors very soon.  Tommy got a book while he has been dreading getting, but since it was 20% off he forced himself to get it. 
My book was a little more enjoyable.
The recipes are really quick and fun.  I can’t wait to try out her breakfasts because they look amazing!
Munchkin went the DVD route and got Big Rigs.  I’m surprised it wasn’t nominated for an Academy Award because it looks riveting.  This may be one that the boys watch without Mommy. 
I’m looking forward to going back to Borders in another week or two to snatch up some other gems for even cheaper.  There were a lot of good looking cookbooks that sparked my attention, but I couldn’t justify forking over the money for em.  
We got home in time to catch the end of the Bachelorette, good thing I DVR it! I choose JP, Ashley should too. End of story, cue the happily ever after.
Now its time for me to get started on dinner! Since Munchkin had his well visit at the doctor this morning, this post is very delayed!
