Think Cool Thoughts

By 10AM this morning, we received three phone calls from the power company informing us that we may lose power at any time.  With the temperature outdoors going over 100 degrees today, I’ve been thinking cold thoughts all morning.  Hopefully I’ll be able to mentally cool myself off if we do lose power. 😉

Dare I say it, I miss winter.
We didn’t do much of anything yesterday, except make dinner.  The rest of the day was spent inside playing and watching cartoons.  Munchkin is usually the last person who wants to go inside, but yesterday we went out for a few minutes and he was the first one climbing the stairs to get back into the cool house.
I used my Netflix Instant to do the Self Bikini Ready, Fast DVD and I really enjoyed it.  It was a challenging whole body workout and I highly recommend it. 
I may have been slightly out of my mind yesterday when I thought turning on the oven to make dinner would be a good idea, but dinner turned out great and made up for the spike in our kitchen temperature.  
I love french fries, but I don’t love how unhealthy and greasy they can be.  Since I had a ton of zucchini laying around in the fridge I decided to make zucchini fries.  Since we also had some frozen fish, I turned it into a meal of healthified fish and chips.  
Baked Zucchini Fries
  • 1/4 cup flour
  • 2 eggs
  • 2 cups Panko breadcrumbs
  • Salt
  • Pepper
  • 1 tablespoon Trader Joe’s 21 Seasoning Salute
  • 1 lb zucchini, cut into 4-5-inch sticks

Preheat oven to 425 and spray a cookie sheet with cooking spray. Place flour in a large ziplock bag. Whisk eggs with 2 tablespoons water and place in a shallow dish. Place Panko, salt, pepper, seasoning in a shallow dish and mix to combine.
Place zucchini in the bag with the flour and shake until well coated. Dip the zucchini into the egg and then into the panko, turning to coat well.  Place breaded zucchini on the baking sheet.  Bake 25-30 minutes, until golden brown. 
Crispy Baked Fish
  • 2 lbs boneless cod fillets, cut into strips
  • 2 eggs
  • 2 cups Panko breadcrumbs
  • Salt
  • Pepper
  • 1 tablespoon Trader Joe’s 21 Seasoning Salute
Spray a baking sheet with cooking spray.  Whisk eggs with 2 tablespoons water and place in a shallow dish. Place Panko, salt, pepper, seasoning in a shallow dish and mix to combine.
Dip the fish into the egg and then into the panko, turning to coat well.  Place breaded fish on the baking sheet.  Bake 25-30 minutes, until golden brown. 
Both were really easy to make and cooked up in the same amount of time, which was a huge plus.  I used ranch for dipping the zucchini fries.  The fries where a huge hit with everyone, even my father who is  meat and potatoes kind of guy.  
I will now return to crossing my fingers and hoping that the power stays on.  Keep cool everyone!
