Even though Tommy and I were on a quest to find a good Mexican place, and we found one
over the weekend, I still didn’t have my Mexican fix. When I saw this recipe on Peas and Crayons, I knew it had to be made. I made some changes from her recipe, so I’ll show you guys what I used to make this deliciousness.
Mexican Lasagna
- 4 large tortillas
- 1 pound ground turkey
- 1 packet taco seasoning
- 1 box Mexican rice
- 1 can refried beans
- 1 can black beans
- 1 bottle salsa verde
- 1 package Four Cheese Mexican cheese
- a few tablespoons of salsa to top
Preheat oven to 350. In a skillet, brown the turkey until fully cooked, add in taco season. Prepare rice according to pacakge directions. Spread a thick layer of refried beans onto the toritllas with a butter knife. In a casserole dish, spoon some salsa verde onto the bottom and top with a tortilla. Layer the remaining ingredients like you would in a lasagna. I did tortilla, refried beans, rice, turkey, black beans, salsa, cheese, tortilla. When you reach the final tortilla, spoon the regular salsa and top with cheese. Bake for 30 minutes until the cheese on top gets brown and bubbly.

Can you believe that it’s already December?! Only 31 days until 2012 and only 46 days until Munchkin turns 2. I seriously can’t believe that I’m going to be a mommy to a two year old. I’ve already started planning his second birthday, I’ve got the theme and cake down. My friend’s girlfriend seriously gives the Cake Boss a run for his money and she will be making Munchkin’s cake. So exciting.
