So I’m kind of freaking out a bit this morning because in just a few hours, I will be holding down the fort myself. I am opening up the office this morning all by myself. Ahh! Hopefully it goes off without a hitch and I don’t mess anything up too bad.
Yesterday was a pretty good day in the eats department. I finally got my butt back into the kitchen and made dinner, even if it was during my online class and I had to alternate stirring and typing. Well worth it!
I’m trying out a new photo editing software since my beloved Picnik is going to be closing very soon. What do you think of the collage?
For breakfast, I scrambled some eggs. I ate them with a side of Canadian bacon and toast. I had intended on making this into a breakfast sandwich, but that just didn’t happen.
As soon as I got to work, I got handed a bunch of papers and told to get on the train and head to Brooklyn to the County Courthouse. On the way there, I stopped at Dunkin Donuts for some caffeine. I love how it’s February and I’m drinking iced coffee.
For lunch I packed a salad with a side of Newman’s Own light Ceasar dressing. While it had a bunch of different veggies – spinach, tomato, bell peppers, radishes, carrots and lettuce, it lacked protein and it didn’t really fill me up. Lesson learned: next time add protein!
When I got home from work, I needed a snack. After perusing the fridge I decided on baby carrots and my absolute fav hummus ever, Spinach and Artichoke.
Once Tommy got home from his meeting, I started on dinner. I made Chicken Pad See Ew, but instead of the usual broccoli, we used asparagus. I also made a side of Brussels sprouts, like I made a few weeks ago. I subbed the bacon with ham because I was lacking bacon, but they just weren’t the same without it. Bacon just makes everything better.
Since February is going to be love your veggies month for WIAW, I think I did a pretty good job of packing my day with lots of veggies to go along with the celebration!
Time for me to run! Don’t wanna be late for my first opening! Have an awesome Hump Day!

Yum! Lots of delicious looking veggies. I miss brussels sprouts, salads and veggies so much! My stupid stomach. The best thing I ate yesterday was a pizza I made with dairy-free cheese. Surprisingly, the dairy-free cheese really did taste like real cheese. 🙂

My best friend is a vegetarian and he eats veggie cheese. It's surprisingly good! Hopefully your stomach gets back to itself soon. I can't imagine how difficult it must be. 🙁
