Hi Everyone! My name is Kayla and I blog at Keep Moving Forward. I am here to share with you a little taste about myself and the things that I love to do.
I am a teacher, runner of all distances, newbie biker, and a food lover. I live in the beautiful Pacific Northwest where I enjoy being outdoors in all of the lush green land this area has to offer. My husband and I were married in December and have loved every minute of our almost 8 months of marriage so far! We are building our home with our two kitties Beanie and Brewtus and are very excited to grow happier together everyday!
I believe that in life it is important to have forward progress in everything you do, whether it be your health, hobby or career. We all should be feeling happier and stronger everyday! I got the idea for the name of my blog – Keep Moving Forward – from a kids movie called Meet the Robinsons. It is about a boy inventor who never gives up on his inventions, Keep Moving Forward was his motto.
Much of my blog is about my running adventures which has transformed into sharing my ups and downs of training as well as recipes that help provide all athletes with much needed nutrition – and a little bit to satisfy the sweet teeth out there too! A teacher by trade I love to share my experiences in hope that people will learn from both my mistakes (because there is always some!) and my successes!
Here is a delicious recipe that I would like to share with you. A friend of mine once made these yummy lasagna cupcakes for a Pinterest themed get together that we had and I decided the other day to recreate them. I didn’t look up the recipe, so I just went with what I knew from what they looked like and from making lasagna before. I started by making a homemade red sauce. This is much easier than most people think. You just combine all of the ingredients (which can vary depending on your taste), make sure to season it well and let it simmer for a while on the stove. I don’t do a ton of measuring when I cook – I usually just throw together things that I like, taste it, and see what else the mix needs!

- 2 garlic cloves
- half a small onion diced
- balsamic vinegar

- oregano
- red pepper flakes
First heat up your pan then sauté any of your onions and peppers in it.. adding the garlic and spices. Then add in your tomato paste and can and stir it all in well. Season with salt and pepper again here. The tomatoey layer really needs seasonings! Then add a splash of the balsamic, this gives the sauce a delicious tang that I think it can’t go without. Let the sauce simmer as you prepare the rest of the ingredients.

- mozzarella cheese

- wonton wrappers
- fresh chopped parsley for garnish
I sliced up some mushrooms and tofu and sautéed them up with some smoke paprika and cumin. Instead of the mushrooms and tofu you can easily do a meat layer! Then I sliced up some mozzarella cheese and black olives for toppings.
To put it all together you start by spraying your cupcake/muffin pan with non stick spray. Then you put a tiny bit of the red sauce in each cup. On top of that you put one of the wonton wrappers. Then layer in the mushrooms a little bit of sauce and another wonton wrapper. I tried to make sure to tuck up the top wrapper so that it was nice and tight with the bottom one. Then I added a little more sauce, a slice of cheese and some black olives.
It took a little bit of time to make the entire creation but it was worth it! Every single bite of these little cupcake babies was delicious! The edges of the wrappers were nice and crispy and the sauce had the perfect spice to it. Not to mention it was light since I made it a meatless meal.
