A late day WIAW is better than no WIAW. I fell asleep with Munchkin last night. It must’ve been all those double unders, but more on that manana! Since it is August (CRAZY!) we have a new theme for WIAW, Summer Staples.
Once summer and high temps hit, I don’t feel like turning on the oven, so baking goes out the window and many of my meals end up being cold salads and veggies. My block had a block party over the weekend and I just happened to make a few of my favorite summer staples for it.
Veggie platter with dip. All of my favorite veggies – rainbow peppers, cauliflower, snow peas and baby carrots. Dip was a quick fix, but with a healthy twist. It was a soup mix, but instead of using sour cream, I subbed in Greek yogurt. No one knew the difference!
I love to freeze raspberries and blueberries and them eat them like little ice cream bites. So yummy and it cools you off!
And when you really need to satisfy your sweet tooth, nothing compares to real ice cream. Hazelnut ice cream with homemade caramel sauce. This was pretty darn good!
This trail mix also satisfied my sweet tooth. I combined some of my Food Pen Pals goodies, granola and date pieces, with almonds and freeze dried berries.
And I’ve been refueling with Click Protein – Vanilla Latte. The most amazing tasting protein powder I’ve ever tried. Fitmixer Aminos have been helping me on my double under quest and Steaz is just plain amazing at anytime.
And last but not least, I have to share something that I made for the first time today.
Chef Katelyn’s Tuna Cakes. They have three ingredients, are super easy to make and taste so so good. Try them!
