I recently read a book called the 150 healthiest foods and cauliflower was listed as a \”confused food\” because people think it lacks nutritional value. It\’s actually a member of the cabbage family and has vitamin c, potassium and folate. It’s also one of the veggies that has a chemical called isothiocyanates that is a potent antioxidant and stimulator of natural detoxifying enzymes in the body. It\’s a great alternative to potatoes and rice as side dishes, and a total fav of mine!

It is also gluten free and provides you with essential amino acids that our bodies need to function properly. I can\’t tell me difference in taste and use both interchangeably!
