So I’ve been away from WIAW for waaay too long, but I am back with a vengeance. I’ve got some awesome things so share that fit this month’s theme to a T! Without further ado, lets get to the eats, people!

First up are two of my favorite fall breakfasts – pumpkin pancakes and pumpkin french toast!

 

Dinners have been yummy too, and the perfect things to warm you up on a chilly afternoon.

Tortellini Soup with a side of Corn Bread.

Spaghetti Squash with Turkey Meatballs and Mushroom Marinara.

Desserts have been pretty amazing too!

We baked pink Madeleine’s for the Breast Cancer Bake Sale at my mom’s work. We also dipped some in white chocolate and sprinkles with pink heart sprinkles. Unfortunately, I didn’t get a picture of the final product…they were so cute, and a hit at the sale!

A 16 Handles opened up just a few blocks from my subway stop and I had to indulge. Fist Pumpkin, Salted Caramel and Graham Cracker topped with some berries, mini peanut butter cups and sprinkles.

I’ve also been loving Oktoberfest and Pumpkin beers, but those deserve a post of their own so I will leave you with just this teaser!

Hi I’m Sylvia and I love to eat! (As if you didn’t know that already) I love WIAW because it lets me look back on what I ate over the week and think to myself, damn I ate some good stuff. Thank you Jenn for being a genius and inventing WIAW. You rock lady! Now let’s move on to the good stuff I ate, because there is quite a bit of it!

 

I shall start with my favorite thing of the week – Thai Peanut Spaghetti Squash. It was so good that I had seconds and ate it for breakfast the next day. No shame!

Numero dos on the list is this watermelon, arugula and Feta salad. Light, refreshing, tasty…the perfect summer salad.

Sushi is my year-round staple. I could eat it every day, but my wallet prevents that from happening. If I ever win the lottery, I’m hiring a personal sushi chef.

Dippy eggs are another S4L – staple for life! Luckily, I make a mean dippy egg so no personal egg chef required.

Let’s move on to the indulgent snackage. I couldn’t resist the Salted Caramel Sauce that I got in this month’s Foodie Pen Pals package. It was calling my name from the pantry, so I gave in. I had it with apple slices, so it basically cancelled out the caramel sauce, right?

And you can’t call it a good week if there is no fro yo involved. End.of.story. There were actually two fro yo trips this week, so you know it was a goooood one!

Lastly, I leave you with an inquiry…

Has anyone ever tried coconut milk yogurt? I only bought one on my last trip to Whole Foods and it took me about a week to try it, and when I did it was chunky and kind of weirdly textured. I wasn’t able to make out the date on the back, so I’m not sure if it’s just an acquired taste, or did I eat expired yogurt. Help?!

Wednesday was most definitely a long day that followed a long night. Being sick is no fun for me, but Munchkin being sick is just so sad. It breaks my heart to see him cranky, sniffly and just not himself. We are going to the doctor this morning to have him checked out. I don’t know if he really needs to be seen by the doctor, but I figured better safe than sorry, especially before a holiday weekend.

Even though I wasn’t feeling too hot yesterday, I had to spend most of the day out of the office. Since, I completely missed lunch time and left my lunch in the office, I made up for it with fro yo. Fro yo is considered a healthy lunch, right? I think I hit all the major food groups – rainbow sprinkles, cookie dough and strawberries. Not only was it a well balanced meal, it also helped my cold.

Since I missed out on my workout Tuesday night, I pushed myself to get it done last night. Even though I wasn’t feeling 100% it felt good to push through the workout and I felt pretty darn good afterwards. Workout B of the Best Body Bootcamp was circuit style and took me through 10 different moves for 40 seconds with 20 second rests in between.I downloaded the Seconds app to keep track my workout and I found it really effective.

The app counts down three seconds before the start end of each circuit, so you know when to peel your sweaty self off the floor and into position for the next move. The free version is exactly like the one you have to pay for, except it doesn’t have an option to save your workouts.

I really found it crazy that I actually worked out last night. I used to be the person who used any excuse possible to skip a workout, but now I try to push myself no matter what. There’s a theory that says it takes a person 21 day to form a habit, and it seems to be true in my case. I’ve been doing to Bootcamp for a bit over a month and my workouts have become a regular part of my day. I love it!

Time for me to run. I need to get my little man up and ready for his appointment. Wish us luck!
