]]>I am actually surprised by how much fun graduation was. I went to my undergrad graduation and I thought it was kind of boring. Law school graduation was completely different. I got to see all my friends for the last time as law students, and we were all excited and just ready to have a great time. I think it also helps that our dean is pretty funny, and all the speakers were fun to listen to. The ceremony finished with the faculty recessing to Happy by Pharrell Williams, which was kind of the perfect ending to our law school careers.
The best part of the whole night was that Alex got to go on stage with me, to accept my diploma. The dean joked that he was the youngest law school graduate that he’s even seen when he handed him the diploma. It was really sweet, and I am so happy that Alex was able to share the special moment with me.
…and now to pass the bar.

]]>First up, I started school again. Cue major ughhh! Breaks always seem to fly by way to fast, and this one was no exception. Luckily, I tweaked my schedule last minute, like literally an hour before I had my first class, and only have classes three days a week. Tuesdays and Fridays are days off, so I have time to catch up on reading and workouts. So far the classes I’ve had seem pretty interesting and the classes that I have on Thursday seem like they’ll be even more interesting, so I’m hoping this semester is a good one. Another plus..no textbooks to buy! I love professors who put together supplements instead!
Along with classes, I started fitmixer bootcamp this week. I just got my products in this week, and I am so excited to put them to good use, along with my meal plan ad meal logging with the LoseIt! app. It’s not easy fitting it work, school and bootcamp, but so far so good.
My little man turns three today! I honestly cannot believe that three years have passed since he came into my life and I couldn’t imagine my life without him. I’ve got some morning surprises planned for him and in lieu of having a huge party like the last two years, we’re having a little cake party on Monday and going skiing this weekend. So excited to get the little guy on skis!
My other not-so-little man turn 24 on Saturday! We’re all going out for a family dinner on Saturday and doing the cake thang for him on Sunday.
Hopefully my rut is over and I’ll be back more often because I’ve got some fun stuff to share!

]]>Finals season is tough on students, but when you’re a student, who works and is a mom, it gets even tougher. With my nose in the books, it wasn’t easy to get a good dinner on the table over the last two weeks. Luckily, thanks to the Foodbuzz Tastemaker Program and Panera, we were able to try some of Panera’s soups for dinner last week!
I am a huge fan of Panera. It is one of the few chain places that I really enjoy eating at and their food is always fresh and yummy. Tommy also basically lived off of Panera his last year in college, when they finally opened one in Williamsport, so the place kind of has a special place in his heart.
I am usually a Broccoli and Cheddar type of gal, but when we walked in and I saw the picture of Panera’s new Vegetarian Creamy Tomato, I knew I had to try it! In lieu of my usual Thai Chopped Chicken Salad, I tried went for their Big Kid Grilled Cheese. What can I say, I needed some comfort food.
The soup was delicious and totally hit the spot! Tomato soup was one of my favs growing up, and while Panera’s is very different from my mom’s traditional Polish tomato soup, it brought the comfort that I needed on a cold evening during finals week, for sure. The Asiago croutons added the perfect crunch to the otherwise velvety-smooth soup.
It didn’t take long for me to dig in, and when I saw the bottom of the cup, I kind of wished that I had gotten the bowl instead of the cup.
But there’s always next time!

]]>I have about 20 days until I can really relax and enjoy the Christmas season and I feel like I am being cheated of a lot of Christmas cheer. Not fair!

]]>Looking back on my July goals, I didn’t do so bad. So let’s reverse before we go forward and do a run down of July’s successes and failures.
1. Go to Crossfit 3 times a week. SUCCESS! We were only able to start Crossfit halfway through the month, but I’ve been there three times a week and am already signed up for two weeks in advance for WODs three days a week. I love Crossfit!
2. Run at least 2 times a week. This goal didn’t go over too well. The first two weeks of Crossfit left me a bit too sore to attempt any runs, but I did get out and run yesterday.
3. Cook at least 3 times a week. DONE!
4. Really start potty training Munchkin. We are there! As long as I don’t put a diaper or pull-ups on him, he uses the potty. We are still working on going pull-up-less for trips outside of the house and at night, but I am so proud of how well he is doing.
5. Sign up for the pool with Munchkin and go to weekly Mommy and Me Swim classes. FAIL. I need to work out my schedule and make this happen. It might involve a 6am wake-up for Crossfit instead of doing the 11am WOD on Fridays. I need to get him in the pool because he loves it! Check him out on the water slide at my uncle’s over the weekend. The boy has no fear!
6. Learn to use my new camera. I’ll give this one a maybe. I didn’t learn as much as I wanted to, but I still played with my camera quite a bit. Then again, there will always be room for improvement.
My August goals include some of the same, something new and dare I say it, some school related goals. Yuck!
1. Crossfit at least 3 times a week. I only have a month of unlimited classes thanks to Groupon so I need to take advantage. Looking to the future, I think I might have to scale my membership down to be able to afford Crossfit long term.
2. Workout while on vacation. Tommy, Munchkin and I are heading down to Virginia towards the end of the month, and while I am planning on indulging and being in vacation mode, I don’t want to loose the progress I’ve made in the workout department. Can you can travel WODs?
3. Stick with the Paleo challenge. My box is having a Paleo challenge and I am being weighed in this afternoon. I’ve read tons about Paleo and found tons of recipes, so I am really hoping I can stick with it for the month and possibly beyond. I am however, going to be much more lenient when on vacation. I am a foodie at heart and I can’t pass up food that I may never be able to try again.
4. RUN. I don’t want to put specific numbers on this goal, but I want to get out there and do it. My races are creeping forward and I need to be prepared.
5. Get ahead on my reading for classes. I have already purchased my books, and they should be arriving shortly, so it’s time to put the put in gear and actually crack them open before it’s too late.

]]>Mooving on the bigger and better things, it’s Wednesday and time to show off my eats. I apologize in advance for the lack of excitement in this weeks WIAW, but my stomach was in knots for most of the day because of the test, but I think I still had some share-worthy items.
After breakfast I made myself another cup of joe and did some last minute reviewing.
It was around 2PM when I finally decided that I needed to eat something for lunch. I really wasn’t in the mood for anything at all (thanks, nerves!) but I made myself a salad – spring mix, yellow peppers, cherry tomatoes and radishes topped with some Newman’s Own Pineapple Salsa. Of course when I opened the fridge to put the salsa back I saw eggs and automatically had an egg craving…so I gave in. Two eggs, over easy, over my salad with a bit more salsa.
I gotta say when the yolks broke and mixed with the salsa, it was nothing short of amazing. Egg topped salads are now added to my list of delicious lunches!
Soon after lunch, the realization that I had a final to take in a few short hours started to set in, so I stress ate some Reese’s Pieces. They were left over from Easter, so I did a public service by eating them. Can’t let candy go on expiring in this house!
I packed some snacks to take with me for the test because over four hours with no food = no bueno.
All that got eaten was the grapes, but it’s better to pack extra than go hungry. Amiright?
On my way to school, I had a lovely meltdown which added to the stress of the day. For my final we were allowed to bring in a little book of the Federal Rules of Evidence, which is basically what we were tested on. As soon as I stepped onto the subway I realized that I knew exactly where my book was..at home, on the floor, next to the couch, a good 20 minutes away from where I was. Good place for it right? So basically I looked like a crazy on the train, crying and trying to call Tommy to devise a plan to get back home, get the book and get back in time for the final. Luckily, I called a friend of mine and he had picked up an extra copy which he so kindly offered to give me. Crisis averted. I am also looking for a good egg-free cupcakes recipe to repay my life long debt to him.
So to calm the heck down, Tommy met me at Starbucks by my school and I sipped on a grande iced coffee while trying to make myself stop shaking. Not a great way to go into a test, but what can you do.
And thus concludes my stressful day of eats. Now that school is doneee I am planning on spending extra time in the kitchen. I promise my WIAW will be more exciting next week!

]]>Since I had my final in the late afternoon, I took the day off from work to review, relax and recharge before heading into the exam. I knew that if I went in to work, I’d be rushing to get home, stressed about the test and totally preoccupied thinking about it all day, so why bother.
Instead of sitting at my desk with a cup of coffee in hand, I started off my morning with a run. It was extremely humid and drizzling while I ran/walked, but it felt amazing. I took the same path I did when I ran on Sunday, but it was a lot busier this morning with lots of trucks and traffic driving by, but I didn’t mind. I listened to Pandora’s Today’s Hits station and knew it was going to a good run as soon as this song came on after I walked out of my house.
In total, I walked/ran a little over 2.5 miles in 35 minutes. The Couch to 10k program I’m following only called for 8 intervals of 1-min run/1.5 min walking, but I did an extra 9th interval because I was still a good way away from home when the program told me to cool down.
Overall, I felt really good after the run. My level of fitness has increased a whole lot over the last year because when I started couch to 5k last year, I was DEAD after each run/walk. Even though I feel like I could skip these first levels of the program, I want to work my way up to my goal slowly and make sure I don’t burn out or overpush myself. Slow and steady wins the race, right?
Now that I’ve graced you all with a wonderfully sweaty picture, it’s time to head to court. Don’t worry, I showered!

]]>Enough on the law school mumbo jumbo, let’s get to the good stuff..the eats! Happy WIAW everyone!
Waffles have become my go to breakfast lately. If you haven’t noticed in the past couple of WIAWs. They are good, versatile and one of the things that I know Munchkin will eat with a smile. Yesterday’s waffle was a Van’s Whole Wheat topped with Justin’s Hazelnut Butter and a banana. I may or may not have drizzled some maple syrup on top after the picture was taken.
Court was the first thing on my list yesterday and of course I forgot to bring quarters to feed the Muni-meter. The meter is supposed to take credit/debit cards also, but I have yet to encounter one that does so without giving me an error message. Since I needed quarters and only had a $20, I decided to buy myself some juice and get change at the same time. I picked up this little gem…
and let me tell you, big mistake on my part. I didn’t bother reading the label (or looking at it apparently, how did I miss the lemon and raspberry picture?) and thought I had gotten a bottle of grapefruit juice. Fail. This was probably one of the worst juices I’ve tried in a long time. It horrible artificial sugar taste and I didn’t take more that two sips of it before it went into the trash. Lesson of the Day: Read labels!
I was lazy and didn’t feel like packing lunch and didn’t feel like spending money to buy lunch either. Instead, I snacked on a Clif MoJo bar and a cup of coffee and held off on lunch until I got home around 3:30. I loved the coconut flakes in this bar!
Lunch/Dunch/Linner consisted of a rogal with butter and a side of orange. A rogal is the Polish version of a croissant and tastes a bit different than its French counterpart. Wikipedia just informed me that rogal is actually translated to Kifli. I grew up eating this delish crescents for breakfast and lunch and I still love em!
I threw together a stir-fry for dinner. Nothing to exciting – chicken, asparagus, red bell pepper, shallots, garlic
and zucchini. I served it over orzo and it made for a yummy, filling dinner.
My post dinner snack was apple donuts! Apple donuts are actually just apples with the center cored out, but doesn’t calling it a donut make it seem yummier…maybe.
Munchkin enjoyed his apple donut topped with some Fruit Loops. He was very intent on getting them perfect before eating. Silly guy – it all ends up in the same place anyway!

]]>…with some snacks of course. Can I just say how amazing these quinoa clusters are. I’ve tried the Cranberry Cashew and the Chocolate Seas Salt and neither flavor disappointed.
The ingredient list isn’t half bad either. Especially for a sweet, chocolatey snack!
