I don’t know about you, but I am so sick of the chilly temps that seem to keep returning to NYC. Instead of piling on the layers, I want to be laying on the beach, soaking up the sun, piña colada in hand. Since I can’t jet away to some tropical island, I made the next best thing, a protein piña coladas smoothie!

Recipe type: Smoothie
Ingredients
  • 1 cup fresh pineapple chunks
  • 5 oz unsweetened Almond Milk
  • 1 scoop Designer Whey French Vanilla
  • 2 tablespoons Light Coconut Milk
  • 10 Ice Cubes
  • 1 tablespoon coconut flakes (optional)
Instructions
  1. Blend all the ingredients together until smooth. Top with optional coconut flakes.

 

This version is quite a bit better for you than its rum based brethren. The scoop of protein and fresh fruit will keep you full, instead of just ingesting sugar and empty calories like you find in many drink mixers. While this can’t raise the temperature by 40 degrees, or turn your backyard into a white sand beach (I had my fingers crossed) it will make you feel like you’re almost on vacation, and feeling like you’re almost on vacation is better than nothing!

Good morning and happy Wednesday! We are finally halfway to the weekend. Except, I have school on Saturday so technically Thursday would be halfway for me, but I digress. Let’s get to the good stuff!

Breakfast came together very quickly after doing some prep the night before. When I got home from school on Monday, I cut up some fresh pineapple and washed and hulled some strawberries. All that was left to do yesterday was throw them into the blended with some coconut milk, frozen banana and spinach. Yum! I love Munchkin’s little bunny cup!

Lunch was my typical salad- spring mix, grape tomatoes, peppers, hard boiled egg (that spins!) and some spinach nuggets all topped with some Newman’s Own Honey Mustard Dressing. The Spinach Nuggets were one of my new purchases at the supermarket this weekend, and lemme tell you they are good! They seriously taste like the real thing, without that mystery pink junk MickyD’s puts into their.

I also snacked on a Clif Z Bar after my salad to satisfy my sweet tooth. I don’t think I will ever get sick of these bars.

When I got home I had a snack to hold me over because I knew my mom was making something yummy for dinner.  Chobani champions Vanilla Chocolate Chunk yogurt + Love Grown Cocoa Goodness = chocolatey heaven.

For dinner my mom made her famous Eggplant Parmesan. This is one of the best things that my mom makes and it was, as usual, amazing. Tommy and I both went back for seconds!

All in all, I think I did pretty good with the extra veggies challenge. Breakfast included veggies, so did lunch and dinner was packed with eggplant which technically counts too, even though it was fried. Either way, my eats were delish!

Yesterday was one of those days where everything was going at 100 MPH. From the minute I got to work, I was back out the door and had to go to court and the Department of State. Since I knew I was going to be having one of those days, I double fisted it in the morning. Reminded me of my college days, but instead of beers I had a spinach, strawberry and mango smoothie in one hand and an iced coffee in the other.

Before I knew it, it was lunch time. Since you’re not allowed to eat on the subway and that’s where I was stuck for a while, I pulled out another goodie from my Foodie Blog Swap.

This little bar has 12g of protein and really helped my hunger. It was pretty yummy, but the texture was a little chalky. Either way, it did the trick.

The Department of State just happens to be a few blocks from where Tommy works, so after I dropped off my documents, I met up with him for a few minutes. Tommy is working on a really biiig job site. It was amazing to watch the steel workers walking around on the beams like it was nothing.

Tommy had been telling me about a smoothie cart that he goes to in the mornings, so being the awesome guy he is, he bought me a smoothie. It was a smoothie kind of day yesterday!

I don’t remember what was in it expect mango and orange juice, but I do remember that it was number 31 on the list. You’re welcome for that piece of knowledge. With smoothie in hand, I said goodbye to Tommy, picked up my documents and headed back to the office. I broke the law again my drinking my smoothie in the train. I was such a rebel yesterday.

When I got back to the office, I had the other snack I had packed – Wasa crackers and Dark Chocolate Dreams PB.

After work was school, but that’s not all that interesting, so lets fast forward to 10 PM when i finally got around to doing Workout B of the Best Body Bootcamp. Workout B consisted of 5 sets of full body supersets. I love the variety in the workouts, I feel like Tina could keep sending us workouts forever and I would never get into a workout slump doing them. I do think I need heavier weights, because some of the arm workouts felt a little too easy with my five pounders. I doubled up my weights to bring it up to 10, but it was a little difficult to hold two weights in one hand and keep proper form. I’m excited to do the workout next week, but with heavier weights.

It’s time to get going. I need to be out the door in 20 minutes. Yikes!
