Hello and Happy Friday! Fridays always seem to be my busiest days and me and Munchkin have been on our feet since this morning. We’ve already been to the post office, done our grocery shopping, ordered balloons for next week’s party and checked out some local bakeries to see cake options. It feels good to check things off the party to-do list and get a workout at the same time. Since we walked to run all our errands, I got it over two miles.

Yesterday was Jerzday, and if you don’t know what that means you must live under a rock it’s the return of the Jersey Shore! Since we both love Jersey Shore, Tommy and I spent the evening at home patiently waiting for our favorite trainwreck.  For dinner we made homemade Hot Pockets.

Hot Pockets were a common after school snack at my house growing up, and every time I pass the frozen foods aisle they seem to call my name. Instead of caving into the strangely delicious processed ham and cheese filling, I made my own. I took a roll of crescents, but instead of tearing them apart into triangles, I left the dough in squares and filled them with chopped ham and shredded cheese.

Pop these babies into the over for about 15 minutes and you’ve got a yummy little, hot sandwich pocket. And Munchkin totally loves these which is a huge bonus.

Last night, while watching the evening news, I saw a story about a really dumb criminal who somehow managed to get the car that he stole stuck on the roof of an apartment building. Genius, I know. After hearing that, the Darwin Awards popped into my head and I decided to check out the winners of 2011.

The Darwin Awards are given to people who remove themselves from our gene pool by doing something really stupid to end their lives. This year’s winner is the Angry Wheelchair Man. Basically, this guy missed the elevator so he decided to ram his electric wheelchair into the doors repeatedly until he fell down the shaft. Second place is held by a guy who decided to plank on his balcony and I think you can figure out what happened there.

Since I’m not trying to win a Darwin Award, I kept my workout simple and away from elevator shafts. I’m having a hard time keeping myself entertained on the eliptical while doing cardio, so I decided to switch it up a bit and throw together a cardio circuit. It went a little something like this.

I did that baby twice while Munchkin napped and I was super sweaty by the time I was done!

Dinner yesterday was one of my favorite summertime foods. When I was younger, my parents sent me to Poland for the summers to stay with family. My aunt’s neighbor had tons of blueberry bushes and would always make fresh blueberry piergoi and bring them over for us. I looked forward to these babies every year, and when we were buying pierogi for our Christmas Eve dinner, I knew I had to pick up a few packages of blueberry.

Traditionally fruit pierogi are topped with a sweet cream sauce which is made with sour cream, a splash of milk and sugar. To lighten the sauce up, I used Greek yogurt, skim milk and a packet of Splenda. This totally hit the spot.

After dinner, I caught up on the first episode of the Bachelor. I’m not sure what I think of it just yet. A lot of the girls seem a bit off their rockers, but the first episode always has the crazies. So far my favs are Lindzi C. and Rachel. I really wanted to like the blogger from NYC and she seemed really nice, until she started balling her eyes out because some other girl didn’t like her. I think they try to get the girls a little liquored up to make the episodes more interesting. I am also tempted to read the spoilers because I’m impatient and hate waiting until the end to see who wins.

My belly is telling me it’s time for breakfast. I picked up something new at Target yesterday and I’m hoping it comes out as good as I hoped. Have a great Thursday!

Can you think of a better way to start off a five day weekend than with pancakes?I can! With pumpkin pancakes!

I woke up this morning with pancakes on the brain and I knew that pumpkin pancakes where the only way to cure my craving. Luckily, I had no objections from my little pancake lover.

I’ve made pumpkin pancakes before, but I couldn’t remember what recipe I had followed so I did a little searching and found this one.  I was very intrigued because the recipe calls for egg whites to be folded in as the last step.  I knew that this would make the pancakes light, airy and extra fluffy.  Needless to say, I was sold.  I tweaked the recipe a bit, so here is my version.

Pumpkin Pancakes

  • 1 cup whole wheat flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • pinch salt
  • 1 teaspoon cinnamon/pumpkin pie spice
  • 2 eggs, separated
  • 1 cup milk [I’ve used both skim and almond milk]
  • 1/2 cup canned pumpkin
  • 1 tablespoon olive oil

Sift together all the dry ingredients.   In a bowl, beat the egg whites until soft peaks are formed. In a separate, large bowl, cream together egg yolks, milk, pumpkin and oil.  Stir in dry ingredients into the wet mixture.  Fold the whites into the batter.  Cook pancakes on a griddle and dig in!

As a side note, if a recipe calls for egg whites to be beaten separately, I always do them first so I don’t have to wash the mixer attachments. If you don’t clean the batter off of them and go to beat the whites, peaks won’t form.

As soon as I bit into these bad boys, I texted Tommy that I had to recreate them for him this weekend. Dare I say, these might have been the best pancakes I ever ate.  Try em out, let me know if you agree!

I’ve got big plans for today, places to go, people to see.  Okay, maybe I was a little dramatic there, but I am on a mission to find boots for the fall. Wish me luck because so far, every time I find something I like, there’s something that keeps me from buying them.

I’m also excited for the premiere of Suburgatory tonight.  I really think that show is going to be great!
