It's so funny, I was just at the supermarket briefly on my lunch break and I saw those spinach nuggets – first time I've seen them and now I see them twice in one day. I was debating getting them! I have Veggie Patch's falafel balls all the time and they're fabuloso. Glad you recommend them!

PS I don't like eggplant yet I LOVE eggplant Parmesan. You will have to see if you can convince your mom to share the recipe with us!
