A few weeks ago, we had a bake sale at school and one of the moms brought in energy bites. They were a big hit and sold out quickly and made me want to try my hand at making them myself. I knew more or less what she had used, so I decided to throw together my own version, based on what we had on hand at home. These Chocolate Chip Banana Bread Energy Bites were super delicious and made the perfect little breakfast bites for the mornings when I didn’t have time to prepare myself a real breakfast.

No Bake Chocolate Chip Banana Bread Energy Bites

Ingredients
  • ½ cup peanut butter
  • 1 ripe banana, mashed
  • 1½ cups old fashioned oats
  • ⅔ cup coconut flakes
  • ¼ cup chia seeds
  • ½ cup mini chocolate chips
  • 2 tablespoons honey
Instructions
  1. Combine all the ingredients in a large bowl.
  2. Stir until all ingredients until well combined.
  3. Refrigerate the bowl for about 30 minutes to harden the mixture.
  4. Remove bowl from fridge and roll mixture into 1 inch size balls.
  5. Store in an airtight container in the fridge for a week. Enjoy!

Making these energy bites could not be easier. Throw together all the ingredients in a large bowl and mix well to combine. Refrigerate for at least 30 minutes and with clean hands, roll the batter into one inch balls and enjoy. To make these a little more decadent, you can dip the bites into melted chocolate.

I found myself reaching into the container a few morning a week, while I ran out the door coffee in hand and they were a great way to curb my sweet tooth without feeling too bad about it.

While I was a huge fan of these guys, Tommy and Alex weren’t huge on the banana taste. Next time, I would make the same but reduce or completely omit the banana to make them happy. The best part about energy bites, is that you can take almost anything you have in the cupboard and make a delicious little bite out of it.
