It’s finally summer! Woohoo! I am off from work for a few glorious weeks, so I thought it would be fun to share what I’ve been eating, now that most of my meals are in my own, lovely kitchen!


WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

I actually have time to make breakfast and am not just grabbing something quick on my way out the door, which is really nice. I have also found that I am not starving first thing in the morning and sometimes my breakfast isn’t until closer to lunch.

20150714_104313Eggs are always a go to breakfast for me. This was two dippy eggs with sauteed mushrooms and a side of avocado and half a pretzel roll bagel. Yes pretzel roll bagels exist and yes they are as delicious as they sound!


20150709_105504One of my new favs are smoothie bowls. They usually consist of my Shakeology with almond milk and a fruit with some ice. I love to top them with more fruit and granola for some crunch. Even though this is just basically a smoothie, for some reason it seems like they keep me full longer than just drinking my regular smoothies.

 

Lunch and dinner are pretty much interchangeable because I usually eat last night’s leftovers for lunch.

wiawBuffalo chicken quinoa bowls are my latest obsession. I cook up a bunch of quinoa, add in grilled chicken, broccoli and other greens that I have in the fridge and top it all with buffalo sauce and a bit of blue cheese. So good, and 21 Day Fix approved!

 

20150707_175206This was my couscous Greek salad with some grilled salmon. Alex and I bought Tommy a set of wood planks for grilling for Father’s Day and this was our first time trying them out. Even though I soaked them for almost 3 hours, the planks went up in flames, but at least the salmon tasted delicious!
20150703_130434A few weeks back we went grocery shopping at H-Mart and a this soup was one of the samples. After trying it, I had to pick up the udon noodles and soup base and recreate it at home. So good!

 

20150604_183052Last but not least are my favorite summer shish kebabs – shrimp, cherry tomato and pineapple. They are so quick to throw together and are ready in a flash. We like to coat them in a little bit of duck sauce mixed with water for extra sweetness, but it isn’t necessary. They are delicious either way.

Since it is Wednesday, I thought it would be fun to share some of my recent eats (or do a major photo dump from my cell phone). 😉

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Tommy is away on business this week, so I’ve been a little lazy when it comes to dinner. Most of the time, Alex doesn’t want to eat what we are eating (we’re working on it), so I didn’t really feel like cooking for just myself.

This is my favorite simple sandwich as of late. Tommy and I are both obsessed with the Trader Joe’s California Style Sprouted Bread and it is the only bread that we’ve been buying for the past few weeks. Lettuce, tomato, turkey and cheddar with a little bit of Dijon mustard.

Chopped salad with grilled chicken. Under all the lettuce and chicken there were tomatoes, red bell peppers and avocado.

20150122_175615This was my first attempt at homemade Chinese food. It actually came out really good, but honestly it was a lot of work for something that you can have delivered to your house within 15 minutes. At the same time, it was nice to be able to control the ingredients that went into it and still get the same restaurant taste.

Beef Barley SoupI also cooked up a bit pot of Beef Barley Soup over the weekend. I actually cooked it on Saturday night, but we didn’t eat it because we have some friends over and we were snacking on other yummy things like cheese and wine. I woke up on Sunday craving it and Tommy and I both had it for breakfast.

20150203_185127On Monday, one of my coworkers kept talking about Super Bowl food, specifically nachos. I was craving them all day Monday and when we had a day off on Tuesday, I knew I had to make some. These are Late July Organic Chia & Quinoa Tortilla chips topped with ground turkey, salsa, black beans and Mexican blend cheese. Even though it isn’t the prettiest looking food, it totally hit the spot.

20150204_221653Last but not least is my current food obsession. I love wings, like I could eat everyday (but my mom says that’s not okay :/). This is slow cooker chicken breast with Sweet Baby Ray’s Buffalo Wing Sauce. I like to scoop it up with a piece of celery and it gives you the spicy and saucy with the crunchy and refreshing all in the same bite. A delicious combo!

I never thought that the layout of a kitchen would make me want to cook more, but since our renovation finished, I have been so excited to be in the kitchen cooking yummy food for my family. It might also have something to do with the fact that we were kitchen-less for a month (and it was horrible!) I thought it would be fun to share some eats in WIAW form, since it’s been a while since I’ve done one of these posts.

Oatmeal has become my go to breakfast almost every morning. On weekdays when I don’t have as much time, I microwave some Trader Joe’s instant oatmeal with milk and water, but when I do have the time I go for old fashioned oats on the stove. I love to throw in a banana and some almond butter for taste.

We picked up this salad a few times from Trader Joe’s and it is wonderful. If you’ve been to Trader Joe’s lately, you’ve probably seen how pumpkin flavored everything appeared on the shelves lately, but this is a great subtle pumpkin flavor that’s actually pretty good for you. I really hope that TJ’s decided to bottle the vinaigrette because it is soo good!

For dinners, I have been obsessed with my spiralizer. I promised myself that when the kitchen was done I would buy a spiralizer and I received an amazon gift card from my cousin for my birthday and immediately purchased the Paderno World Cuisine Spiralizer. Trust me when I say it was worth every penny.

This is spiralized zucchini with cherry tomatoes, baby bella mushrooms and shrimp topped with a little Parmesan cheese.

This is yellow squash with spinach, chicken and feta cheese. Both these dishes took like 20 minutes tops to make. So easy and so delicious.

This was baked chicken with spaghetti squash and bacon Brussels spouts. I forgot to snap an after picture, but it was so good!

No WIAW is complete without wine and cheese. I could eat that whole block of brie in one sitting!

Last, but not least is sushi! We went to a sushi buffet called Mizumi and it was incredible. Literally every kind of roll you can imagine. I ate waay too much, but I just had to try everything. Luckily we don’t go to these types of places very often.

Surprise! I am actually cooking these days. Before I finished working for summer, it was almost impossible to find the time to cook anything that didn’t involve a microwave. Now that I am home, it’s a lot easier to get some good food on the table and still manage to get all of my studying in. I can only imagine what kind of elaborate meals I will be making in two weeks when I am done with my studying and still have three weeks off! Anyways, here are some of the things that I have been chowing down on lately. And, as usual, I am linking up with Peas and Crayons for today’s WIAW.



First up is my go to breakfast as of late. Trader Joe’s honey Greek yogurt, strawberries and delish granola that I bought at Ikea of all places. It was whole hazelnuts in it and it tastes amazing.

Next is my attempt at poached eggs. Tommy and I were watching Rachael Ray while trying to decide what to have for breakfast and she was showing how to make poached eggs. I always thought they were super difficult to make, but she made it seem really easy. I gave it a shot and they came out surprisingly well.

Next is one of my go to lunches, or actually a variation of it. A while back when I was still at my previous job, I was in the city for work related things and I stopped in for lunch at a deli with a hot bar. They had all sorts of salads, and I tried a tomato, avocado and egg salad. Super simple, but so good. Since then, I have been making different variations of that salad. This one is just egg and avocado and a smidgen of mayo to make it creamier.

This is my fav summer salad. Arugula, watermelon and feta topped with balsamic vinegar and olive oil. It seems like a weird combo, but it is really tasty and refreshing.

Quesadillas are always a favorite of mine, especially when I come home hungry and want to eat NOW. These were made with Mexican blend cheese, tomato and avocado and a side of salsa for dipping.

This is just my tried and true Greek Couscous Salad topped with grilled lemon chicken.

And last, but not least, sushi. Because sushi always makes everything better. The roll in the back was a New England roll and probably one of the best rolls I’ve ever had. It was an eel avocado topped with snow crab. It was a weekly special roll at the place we go to and I am really hoping they will be able to recreate it next time we go.

So it’s been almost two weeks since we got home from vacation, but the one thing I keep talking about (other than our engagement!!) is the food. We stayed at an all inclusive resort in Cancun, the Marina El Cid Resort & Spa, and the food was to die for. While we were there, we tried three of their sit-down restaurant for dinner and we also had a beautiful private dinner on the beach which Tommy planned as part of our engagement celebration.

Our first night at the resort, we went to the seafood restaurant, Marina.

photo(117)Tommy went for the seafood stuffed salmon and we both practically licked our plates clean. After this dinner, we knew we were in for some good eating over the week.

On our second night we went to the Mexican restaurant. When we sat down, we asked the waiter for drink recommendations. He asked us is we liked spicy and when we said that we did, he brought us fire margaritas. They were made with hot sauce and had a really nice kick to them.

For our entrees, I got the fajita, which I failed to photograph and Tommy got seared tuna with risotto.

Our third dinner was a sunset dinner on the beach following our engagement. Tommy got to pick out our whole meal, and all the food was amazing. We started with champagne and three different types of bread with an oil and vinegar dipping sauce. How amazing was our view?!

Next was a spinach salad with brie cheese.

After that was lobster ravioli.

photo 3And as is we weren’t already stuffed, our entree was lobster stuffed chicken. This was so so good and since we so stuffed, our waiter was kind enough to pack it up for us to take back to our room because we just couldn’t eat anymore.

On our last day we went to the Mediterranean/Asian fusion restaurant. They had a delicious antipasto/sushi buffet to start and we both got the tuna sashimi.

The food was great, but this wasn’t half bad either.

Happy WIAW! This year for lent, I decided to give up meat. I gave up meat last year also, and I found that it was a challenge to eat meat free, especially with a house full of meat eaters, but that I don’t really miss eating meat. It also made me think about my meals in advance much more than when I eat meat, which is a big plus for me and helps with mindless eating. See my meatless WIAWs from last year: 1, 2, 3.

 

Here are some of the meatless eats that I have been enjoying lately.

My breakfasts usually fall into one of two categories:

…or an egg and cheese sandwich. This one was eaten in my car as I stood in the traffic of the century yesterday morning on the BQE. photo(108)

My lunch varies from day to day. Sometimes I will eat whatever the kitchen is cooking at work, some days I pack a salad and some days we order deliciousness like these Thai Mixed Veggies. So simple, yet so yummy.

My favorite dinner of the last week is this baked salmon with a side of Trader Joe’s Asian Vegetables w/Beijing-style Soy Sauce.

photo(100)Sauteed spinach and onions with Polish kielbasa. This was a clean out the fridge meal before grocery shopping and it totally reminded me of my summers in Poland as a child where my aunt would make kielbasa and onions for lunch.

empanadasEmpanadas from the Nuchas Food Truck. I had a portabella mushroom and spicy chicken empanada. They were so good, especially since I hadn’t had empanadas since high school!

photo(103)A big bowl of fruit and veggies that was turned into some green juice. I try to juice on the nights that I don’t have school and I really think this has helped keep me healthy this winter. (knock on wood)

photo(104)I have been loving these two dips with carrots, cucumbers and peppers. They hit the spot when I am feeling something crunchy.

photo(102)Speaking of crunchy, I have been loving these Eatrageous chips. The amazing people at Eatrageous sent me a big old box of these in a bunch of different flavors like Wasabi Ranch, Sweet & Smokey BBQ, Mac & Cheese and Sea Salt and I’ve been sharing these like crazy. They are non-GMO, gluten free and not made by baking or frying which eliminates the need for grease in the cooking process, while keeping the chips super crunchy. Good stuff!

Even though our vacation did not go as planned, we still had the opportunity to get some good eats between saltines and Gatorade. Before heading down to North Carolina, I salivated over tons of menus and even though we weren’t able to visit all the places I planned, we did get to stop at some great restaurants.

The condo we stayed at had a full kitchen so we were able to have breakfast and lunch at home instead of eating out for every meal. It was also super convenient to be able to leave our beach set up in the sand and come up for some food.

First up is one of my favorite things in life, quinoa and eggs. We brought leftover Southwestern Quinoa Salad with us and I enjoyed it topped with some dippy eggs.

Goat cheese and fresh tomato sandwiches -something I never tried before and was really surprised by. The flavors worked great together and made for a very satisfying lunch.

Dinner at the Front Street Brewery. We went for a brewery tour and got to taste some of their amazing beers and we stuck around for dinner. I had the Blackened Salmon with red rice and seasonal veggies.

For our last dinner on vacation, we headed to the Riverwalk in Willmington. After strolling back and forth, we chose The George. We started our dinner with the shrimp and crab nachos. They were amazing! photo(174)

For my entree I chose the crab stuffed salmon with herb risotto and spinach. I was obviously in a very crabby mood that day and I practically licked my plate clean.

No vacation is a vacation without some treats. We stopped at Majik Beans coffee shop for some lattes. So rich and delicious.

When researching Carolina Beach, the number one rated place was Britt’s Doughnuts. They are the #2 rated doughnut in the United States and we could not pass up the opportunity to try them. They are so busy that the doughnuts are cooked fresh to order and so soft and airy that they practically melt in your mouth. photo(169)

Hello there and Happy Wednesday! It’s been quite some time since I shared some WIAW eats, but after this weekend, I have some very yummy things to share!

On Friday, we headed out to the piers to watch the latest sunset of the year. Right next to the piers there is a little Italian restaurant that makes some of the best brick oven pizza I’ve ever had. The crusts are thin and crisp and the toppings are to die for. We got two pies – the Rughetta e Proscuitto Di Parma and the Quattro Stagioni. One is topped with prosciutto and arugula and the other is a 1/4 each of mushroom, ham, artichoke and white pizza.

As usual we ordered way too much, but had enough to enjoy on Saturday as leftovers. We also walked our pizza off while taking in the amazing sunset. This is a view I will NEVER tire of.

On Saturday, we got up bright and early to head out to the farmer’s market to get all the things we needed for our BBQ that night. I love the farmer’s market! I could wander around all day and take in all the fresh fruit and veggies.

After the market we headed home to prep for the evening. We had a bunch of friends over and good food + good beer + good friends = an awesome night.  Tommy was the grillmaster and I give him all the credit for all the amazing eats. Also if you’ve never grilled pineapple you are missing out. I couldn’t get enough!

On Saturday, Tommy surprised me with dinner at Penthouse 808 in Long Island City. The restaurant is located on the roof of the Ravel Hotel and has a gorgeous view of the 59th Street Bridge and Manhattan. Our reservation was for 6:45, perfect timing to enjoy the sunset over dinner. Even though the restaurant is on the roof, it is open year round. There is a retractable glass bubble, for lack of a better word, which they close up when it’s too cold to dine al fresco.

We started dinner with drinks. I definitely needed a drink after two days of studying. The Wasabi Margarita caught my eye right away. The margarita itself wasn’t spicy, but the glass was rimmed in sweetened wasabi which did had a bit of a kick.

We were pretty hungry going into dinner since we had only eaten breakfast that morning, so we started with some appetizers. Being a huge fan of tuna, Tommy immediately suggested the Tuna Tartare Tacos. This was probably the most interesting presentation of Tuna Tartare that I’ve ever seen. We also ordered the Korean Style Chicken Wings. I had read in multiple reviews that the wings were great and I since couldn’t remember the last time I had wings, it struck a major craving. The wings were spicy, but not too spicy and hit the spot. The chili flakes on them make the eating process a little messy, but wings are always messy.

We also split a sushi roll – the Smoke Stacks. Spiced tuna, avocado, kani and oshinko in marbled seaweed topped with tobiko.

Finally, for my entree I went with the Pan Roasted Chicken Breast which was marinated in Sake Teriyaki and served with a side of Chinese broccoli and pineapple fried rice. I don’t usually order chicken when we go out to eat, and I was this.close to getting the salmon, but the pineapple fried rice caught my eye and I couldn’t say no. The chicken was very moist and the teriyaki gave it a great flavor. The rice didn’t disappoint either!

Tommy went with the Soba Noodle Stir Fry with chicken.

Overall, we had a great dining experience. The food was very good, the service was decent and the views were amazing. I definitely recommend it!
